Balbir's restaurant in Glasgow just off Dumbarton Road is an Indian restaurant of style and substance. The dining room is a solemnly gorgeous space of black and cream with dramatic drapery, sparkling chandeliers and downlighters to provide pools of illumination. Balbir's, named for its owner Balbir Singh Sumal, is the first and possibly the only restaurant to have won awards for the healthfulness of its food. Indian cuisine, which Britain adores, relies heavily on ghee and other heart-unfriendly ingredients, which Balbir's has replaced with cholesterol-free rapeseed oil. Many other dishes have been altered and lightened so diner can enjoy this fine cuisine free of guilt or calorie-counting. The menu is based on home-style traditional Indian cooking but with some contemporary twists, and, because of the commitment to diners' health, missing some familiar dishes like madras and vindaloo. But the waiters are happy to guide diners through any unfamiliar dishes and the service is professional.
